Spring Pancake Recipe

Ingredients
For Pancakes:

- • 200ml boiling water
- • 1 tbsp vegetable oil
- • Pinch of salt

- • 100g cucumber, julienned
Instructions
- 1Sift flour into a large bowl, add salt. Gradually pour in boiling water while stirring with chopsticks.
- 2Knead the dough for 10 minutes until smooth. Cover and rest for 30 minutes.
- 3Divide dough into small balls (about 30g each). Roll each into thin circles.
- 4Heat a dry pan over medium heat. Cook each pancake for 30 seconds per side until bubbles form.
- 5Fill with vegetables and meat, roll up, and enjoy with soy sauce or sweet bean sauce!
